Installation instructions in Quick Start don't work

The installation instructions in the Apicurio Registry Operator quickstart appear to contain errors.

Specifically, in the following instruction:

curl -sSL "https://raw.githubusercontent.com/Apicurio/apicurio-registry-operator/v1.0.0/docs/resources/install.yaml" |
sed "s/{NAMESPACE}/$NAMESPACE/g" | kubectl apply -f - -n $NAMESPACE

Firstly, I suspect {NAMESPACE} is supposed to be replaced with the value apicurio-registry-operator-namespace during compilation of the documentation, as currently it doesn't match anything.

Secondly, I find that $NAMESPACE will be replaced as that string, rather than the value, unless surrounded by double quotes.

The complete command I found to actually work was:

curl -sSL "https://raw.githubusercontent.com/Apicurio/apicurio-registry-operator/v1.0.0/docs/resources/install.yaml" |
sed "s/apicurio-registry-operator-namespace/"$NAMESPACE"/g" | kubectl apply -f - -n $NAMESPACE
