I'm looking for examples to make a pressure-latitude plot like this:

which is created using NCL's function. Any idea how to do this with UVCDAT?

@Rex-Diego that would be the yaxisconvert option on vcs's graphics method. Unfortunately I believe it's is disabled in 2.8.1 I will check to see if it's back in the upcoming release. (2.10)
