4系でログの出力先を変えたい場合の設定方法のページをつくっておきたい
内容としては以下2点が参考にできそう。

プラグイン毎のログ出力切り替え詳細な利用方法。
EC-CUBE/ec-cube#3530

.env ファイルの APP_ENV の値で設定
EC-CUBE/ec-cube#3380 (comment)
