Permanent fix for rendering GUI on Mac OS X 13 Ventura

Problem

Need to permanently switch to Processing 4 with updated P2D renderer as a result of investigating a fix for #1085. As of Nov 15, 2022, an alternate build of 5.1.0 was uploaded which used Java2D renderer, but this doesn't work well on Windows 10/11 due to issues with resizing the window.

REQUIREMENT:
Processing 4.0.2 (not released as of today, though tested by building from source)

Render the GUI on all OS

Doing this again for GUI 5.2.0.

Fixed with update to GUI v6 and Processing 4. Currently testable in development with Processing 4.2.

This issue can be closed after build is tested on Mac OS 13 (maybe 14).
