http://jsonplaceholder.typicode.com/ is a great example of a simple RESTful service. There's also a docker version of this here: https://hub.docker.com/r/clue/json-server/

We should look at either creating a sample dataset or using what jsonplaceholder has (http://jsonplaceholder.typicode.com/)
