Add a binary classifier for https://github.com/valkey-io/valkey

Why is this needed:

Valkey is beginning to replace redis in many places

Additional context:

For the alpine variant at least the binary is at /usr/local/bin/valkey-server

There are no official NVD CPEs yet, but I've been using the following in our enriched data as they seem likely candidates:

• cpe:2.3:a:linuxfoundation:valkey:*:*:*:*:*:*:*:*
• cpe:2.3:a:valkey-io:valkey:*:*:*:*:*:*:*:*
  Until they are official though they should be marked as syft generated sources rather than as official NVD ones
