Our Let's Encrypt SSL cert support has been an ugly hack to work around the breakage introduced by kube-lego not being maintained any more.

This has recently been fixed in jupyterhub/zero-to-jupyterhub-k8s#1539, so we should be able to drop the manual certificate management code.
