Add new Brightway Documentation Page to pydata-sphinx Example Gallery

The Brightway documentation is using the pydata-sphinx-theme. This theme is used by a number of other well-known projects, including pandas, numpy, scipy, etc.

Since we are using a number of very clever and well-documented customisations (GH Actions and GH App for auto-updating git submodules, etc.), I was able to add docs.brightway.dev to the example gallery of the pydata-sphinx-theme:

• added @brightway-lca documentation to example gallery pydata/pydata-sphinx-theme#1119
• Add new Brightway Documentation Page to pydata-sphinx Example Gallery pydata/pydata-sphinx-theme#1232
• docs: change rational of the gallery grid pydata/pydata-sphinx-theme#1390

As soon as 2.0.0 is complete, I'll apply to get our site added to the featured pages of the example gallery. Up there with pandas, numpy and scipy ✨
