Guppy is a super awesome editor and I personally quite like the idea of building an editor on top of KaTeX.
I'm sure that you're aware of the mathlive editor. Its developer is now working on a more unambiguous mathematics interchange format called math-json. (Explanation behind why he is working on it arnog/mathlive#500 )
Since that format has some advantages for me, mainly the fact that I can take it and manipulate it like a proper expression-tree, I wanted to suggest adding support for it to Guppy.
Furthermore, seeing as how math-json is still in development, it might be worthwhile to provide some feedback to make math-json better and/or take inspiration from it for your own neat format
