It it supported to just use the iamRoleStatementsName config and not customize the roles in any way?

Yes, you can definitely do the following:

  MyAwesomeFunction:
    handler: awesome.handler
    iamRoleStatementsName: "my-awesome-role-name"
    iamRoleStatements: []
