[Feature]: provide a way of renaming the jaeger-all-in-one service name

Requirement

As a Jaeger user on Docker Swarm
I want to change the service name that appears for jaeger-all-in-one
So that the UI won't look as janky.

I am thinking it should be a simple Environment parameter like

  - JAEGER_SERVICE_NAME=jaeger

Don't agree that it "looks junky", but OTEL SDK does have ability to override resource attributes via env, so adding this in #4932

janky, is in it looks odd because everyone else on my swarm is short one word service names and jaeger-all-in-one is the longest one.
