Currently it is not possible to add new fields to the nginx-controller & nginx-defaultbackend PDBs such as unhealthyPodEvictionPolicy so I would like the ability to add this new policy.

No

unhealthyPodEvictionPolicy was introduced as experimental in Kubernetes 1.26
