Huh, I actually just fixed it right after I posted this issue. Installing setuptools with pip (pyenv), pip3 (brew installation), pipx, etc. wasn't working, so I did a brew install python-setuptools (Found here: https://formulae.brew.sh/formula/python-setuptools).
I then re-ran brew install mopidy and it successfully installed. Will leave this open for the timebeing if maintainers think it may be useful to add python-setuptools as a prerequisite to the brew formulae (I'm not 100% sure how brew formulas work)
