MacOS X (M1 Chip) installation issues

Discussion around issues uncovered when attempting to install the kurated-addons on Macbook Pro using M1 chip.

• scripts/kind-up.sh uses envsubst which doesn't exist
  • install gettext which includes envsubst - brew install gettext
  • OR use helm for templatization of YAML files
  • OR use ytt for templatization of YAML files
• tilt can conflict with ruby's tilt see this for more info.
• scripts/ci.sh uses readarray which doesn't exist as mac uses the following version:

  • ➜ bash --version
    GNU bash, version 3.2.57(1)-release (arm64-apple-darwin22)
