Julien recommended we adopt the same pattern as GDocs or Notion.
Deleted docs are kepts for 30 days in the trash.
I'm not a big fan of the trash concept because it inevitably creates a bit of support. Since you keep the document for 30 days, you create an expectation in the user that deleting = not definitive.
I prefer approaches where we create friction for the user so that he pays extra attention to what he's doing when he is deleting because his actions will be permanent. See GitHub example bellow. The downside is you can't do quick cleanups, deleting many docs at a time.
