Revamp config

The initial version of eslint-config was introduced in 2018 with the goal of having a consistent code style across the nuxt ecosystem. However, over time it started to become a legacy. By introducing nuxt 3, I like to introduce a set of breaking changes to ensure defaults keep aligned with the ecosystem.

• Removing jest plugins and dependency (Remove jest dependency #180)
• Improved typescript support. Ideally from the same package
• Better compatibility to work with prettier out of the box or minimal prettier configuration
