All visualizations should use OUI color palettes

In opensearch-project/oui#601, we identified that most visualizations in OpenSearch Dashboards today do not use OUI colors when defining their color palettes. To increase visual cohesion and provide faster iteration on look and feel changes, we need to update all visualization color palettes to use OUI variables or generation functions.
