I can confirm that 2.0.7 Is still the latest release available for Centos 7. I could not find any mention that 2.1.x is not compatible with RHEL7 based distros.
I enabled the testing repo for Centos 7 which provides me with 2.1.8.

For using the newer 2.1.x branch one has to enable the
zfs-testing
repo, which is not ideal for production machines (at least in principle).Please provide ZFS 2.1.x in the main
