[DOC] Explain the common practices and settings in our repositories

We have common rules we want to apply to all repositories, currently we do it manually but we want to change that: #25

Some rules should be publicly documented, mainly how we use and merge PRs (squash only) as this is not the most used method on GitHub. We could explain why we use this method and what the benefits are for the project.
