Vanilla Frozen Custard
Ingredients
=============================
2 cup heavy cream
1 cup whole milk
2/3 cup granulated sugar
6 egg yolks
2-3 tsp pure vanilla extract
1/4 tsp salt
Directions
=============================
- Combine cream, milk, and salt to a small saucepan over medium low heat.
- Slowly wisk in sugar
- Simmer about 5 minutes or until sugar dissolves, stirring frequently with the whisk
- Remove mixture from heat
- In a large bowl, begin whisking egg yolks
- While whisking, slowly drizzle in a 1/2 - 3/4 of a cup of the cream mixture
- Slowly whisk egg/cream mixture back into the saucepan with the remaining cream mixture
- Whisk in the vanilla extract
- Return the saucepan to a medium low heat and cook until mixture starts to thicken.
- Pour the mixture through a mesh strainer into a bowl
- Allow the custard mixture to cool to room temperature
- Cover the bowl and move to the fridge to cool to refrigerator temp (this could take anywhere from 3-10 hours)
- Churn in an ice cream maker according to it's directions.
- Serve custard while still semi-soft (somewhere between soft-serve and hard-pack ice cream)
