Solve the sidescan issue in our stonefish simulation.

Make vehicle model more stable so that the sidescan doesn't oscillate in strange ways?
We might need to change some environment parameters in our stonefish environment?
Close the sidescan issue in Stonefish repo
Update README for smarc_perception repo to reflect the change
