Testing on windows VM with ble dongle and LightBlue

I've been having issues testing most functionality with my current setup:
Mac OS M1 chip
Windows VM on Parallels
LightBlue virtual device and also tried nRF bluetooth dongle
Using Quick_Blue example code

connect seems to work (nRF establishes connection on its GUI) although it takes minutes for the _handleConnectionChange callback to print something, but trying anything else either results in a crash or I get an "unknown deviceId"
If i try and wait for the callback before proceeding. I get this issue from nRF connect's GUI BLE_HCI_REMOTE_USER_TERMINATED_CONNECTION which would seem to indicate that the app terminates the connection before the handler prints a status change of the connected device.

Anyone got this setup working?

I've also set it up on a Surface pro (same flutter doctor -v results as above), using a nrF dongle but still not luck with similar results
