Example in doc needs to be updated

Description:

Correct all the examples to v2 instead of v1

The examples in this doc needs to be updated, instead of addHeader -v v1 change it to addHeader -v v2

currently get this error when using this examples

Error exporting the API Policy: 404 Not Found
