Update Documenter version for doc building #339

This updates the version of Documenter.jl used to build the docs.

One neat effect of this is that the updated CSS doesn't highlight every single inline code thing with red anymore, as well as the usual goodies like edit links, a link to the repo etc.

I'm not 100% certain how this will interact with the existing CI here since that's also quite old, but I think it should be fine? I guess we'll see.
