nixos/kanidm: rename options

As per #353681 this changes the bindaddress to be split into address and port. We also change the option naming to be more in line with what other modules are doing, and also in my opinion is easier to understand.

This was necessary to allow for the new port and address options to fit in somewhere, since they are server specific, but don't belong in the toml config.

Should probs be 2 commit one renaming and one new option, will change later, since this shouldn't be merged before 24.11 anyway.

• Tested basic functionality of all binary files (usually in ./result/bin/)
• 24.11 Release Notes (or backporting 23.11 and 24.05 Release notes)
  • (Package updates) Added a release notes entry if the change is major or breaking
  • (Module updates) Added a release notes entry if the change is significant
  • (Module addition) Added a release notes entry if adding a new NixOS module
