As the latest PHP image uses Debian 12 and there have been reports of failure to install NGINX or doing apt-get commands (nginxinc/docker-nginx#804) I'm opting to use the default installation of nginx using apt-get to see if it is more stable. Of course this will reduce the flexibility of updating NGINX when we like.
