Expanded the documentation for the ADS1256 module, along with cleaning up the other Analog addon pages.
The Analog pages were renamed to better organize them in the menu, and to help clarify their hardware requirements. Definitely open to different naming here, but we need to account for the autogenerated menu sorting, since it uses file names and will sort
analog.mdxbelowanalog-ads1219-i2c.mdx.I can also update those names in the Web Configurator for next release, so we can get newer screenshots that match the new names.
Also added some clarfications to the Rotary Encoder addon page.
