I'm unable to reproduce any of these with just C2ME (also tried with fabric-api). Try getting a minimum set of mods reproducible.

I found! Its the combination of 2 bugs:
First - Fabric API - Lithium conflict. If Fabric API presented, Lithium randomly (seed undepended!!!) change generation of flowers, trees, watermelons. Affected all seeds

Second - Fabric API - Lithium - C2ME. To broken by Lithium generation added mushroom blobs. I create 5 worlds in 1.20.1 with my seed, only 2 have problem and only in one place. Cant reproduce without C2ME

I've confirmed it is some weird compatibility issue with fabric-biome-api-v1 and c2me-notickvd. The fix isn't very obvious and I'm currently investigating this.

I've check the issue and it appears to be a visual glitch rather than actual mushroom generation. Relogging makes the world appears normal again.
