fix compat with pyparsing 3.2

Hi there, here's some small fixes I noticed from Homebrew migrating sigma-cli to python 3.13:

• Fix some unused imports pyparsing.(List|Set) that are broken on pyparsing 3.2 (see seeing ImportError: cannot import name 'Set' from 'pyparsing' issue in 3.2.0 release pyparsing/pyparsing#576)
• Test suite fixes
  • Fix invalid escape sequences raising a SyntaxWarning since python 3.12
  • Remove re.template import which was removed in 3.13
  • Add pip as a dev dependency since test_plugins.py fails without it
