We're currently using PHP 7.3 which has today entered into security fixes only support. We should update to PHP 7.4/8.

php7.3 is latest in official Buster repositories, not sure about CloudVPS repositories

Debian Bullseye will only have 7.4 :(

We have gotten the go-ahead that we can put on PHP 8 versions on our own. This is no longer blocked.
New tests will have to be deployed for PHP 8.1 and 8.2.
We will be dropping PHP 7.3 and PHP 8 support post-upgrade to Laravel 10 (#628).
