Literally a few days after I had given up hope of ever supporting Python 3.9 due to vtk, kitware pulled it off and got development wheels for python 3.9. Thanks @Kitware.

Check:
https://pypi.org/project/vtk/#history

Wheels are still in a development state and unit tests are failing locally on pyvista, but they pass here as we're using a subset of the features.
