Add the ability to mock AsyncSearch operations

Description

This PR adds the ability to mock AsyncSearch operations in DynamoDB

• The AsyncSearch<T> class now implements the IAsyncSearch<T> interface
• ScanAsync(...), FromScanAsync(...), QueryAsync(...), FromQueryAsync(...) now return the IAsyncSearch<T> interface

I have added new unit tests to showcase how a user will mock these interfaces.

• Added new unit tests.
• All existing unit and integrations tests pass.
