Support proxying IPv6 traffic via redsocks #2408

Our current redsocks examples and test cases only proxy IPv4 traffic, allowing IPv6 traffic to still reach the internet without a proxy.

See: #2352

Not sure yet what is required here, whether it's just a change in redsocks.conf, or an additional redsocks build flag, or how best to test that both are proxied correctly.
