Add back deleted ED25519 test

We deleted a test in #7276, don't forget to add it back to the codebase

Problem Definition

In #7276, we deleted the following test

because we moved all Txs to use proto Any, and we don't have ED25519 support yet.

But in #7268, we are adding ED25519 back. So we should add this test back.
