[3.x] Expose intersect_point in 3D physics server #54577

Also cleaned a few things in the documentation for 2D.

Closes godotengine/godot-proposals#3262 for 3.x.

Should be pretty safe to cherry-pick for a 3.4 minor release since it's not modifying existing functionalities.
