From a conversation with @ajaysubra about gemfile and the example app.
The idea here is to use a gemfile to define iOS dependencies better (e.g. cocoapods and ruby version), and then of course include instructions about how to run the example app.
I also used this to fix the CI, since there was currently an error caused by a conflict between latest cocoapods (running on the github actions runners) and react native.
