Change name of interchange_meta -> mol_specs and add structure to MDTaskDocument

A small 11th hour renaming. Would love to get this in before the new emmet release @tschaume.

@orionarcher the rc10 release seems to be working fine in production. So whenever @tsmathis is ready to make the next minor release, he can merge and include this change.
