I see the Wyze-bridge has support for manually controlling a PTZ camera, but I was curious if there was support on the v3 cameras for their "privacy" mode.

I'd like to be able to control this via MQTT or the API directly, but I don't see any documentation that calls out this feature directly.

Potentially in the future.

This isn't supported right now as the "privacy mode" switch is sent over the wyze HTTP servers, and all our commands are sent directly to the camera.
