Update release automation to append new versions of AppProtect WAF v5

PR #6169 added a new version matrix table to track compatibility between versions of the NGINX Ingress Controller & AppProtect WAF v5 + WAF Enforcer and WAF Config Manager.

This issue is to capture the potential updates needed for our release automation to ensure this table is updated for each release, similar to how we update our technical specification table.
