docs: correct profile usage of cargo test --release #6345

From trying it out on a project (see varlociraptor/varlociraptor#54 (comment)), I have realised that the profile usage by cargo test --release differs from what is documented in the cargo book. So here comes my correction suggestion...

Unfortunately neither is quite correct. Test targets and unit tests use the bench profile, and dependencies (including the local lib/bin) are release. I've been intending to write detailed documentation on the default target/profile selection, I'll try to do that soon. For now, maybe add a parenthetical to the original that dependencies use release?

Thanks for the clarifications -- I tried to incorporate them, but please do double-check that I got it right. Also, if you feel like this is overkill, please say so. And more detailed documentation in the mid-term is of course very welcome! ;)
