docs: version for coverage.thresholds.<glob>.100

• Continues feat(coverage): allow '100: true' for glob pattern coverage thresholds (fix #6166) #6174 (comment)

This was accidentally released already in 2.0.4 patch release. Let's mark it into documentation correctly as 2.1.0 though.
